Centrolina is delighted to welcome Chefs Jamilka Borges and Dianne DeStefano of Lilith for a one-night-only Chef’s Table dinner in collaboration with Chef Amy Brandwein, an eight-time James Beard Award nominee (2026 Semifinalist for Outstanding Restaurant, 2025 Semifinalist for Outstanding Chef, and a six-time nominee for Best Chef: Mid-Atlantic).

Hosted in Centrolina’s intimate Chef’s Salon, this special evening will feature a collaborative tasting menu celebrating seasonal ingredients, shared influences, and the creative dialogue between three chefs whose culinary perspectives are rooted in craft, culture, and storytelling.

Chef Jamilka Borges, a San Juan–born chef known for her vibrant, ingredient-driven cooking, has built a career defined by sustainability, preservation, and community. Her work as Executive Chef at Bar Marco and other acclaimed restaurants earned national recognition, including a James Beard Foundation Rising Star Chef semifinalist honor and a James Beard semifinalist nomination for Best Chef: Mid-Atlantic. In 2024, she opened Lilith, a seasonal, coastal-inspired restaurant celebrated for its bright flavors and welcoming spirit, quickly earning recognition as one of Pittsburgh’s Best New Restaurants and a 2025 Best Restaurants honoree.

Pastry Chef Dianne DeStefano, co-founder of Lilith, brings an artistic sensibility shaped by her background in fine arts and classical pastry training. After studying at Johnson & Wales University and working in acclaimed kitchens including The Squeaky Bean and Bar Marco, she became known for developing thoughtful, from-scratch pastry programs and mentoring fellow chefs. A James Beard Foundation Bootcamp alum, Dianne is widely respected for her precision, creativity, and leadership in the kitchen.

Together, Jamilka and Dianne have created Lilith as an intimate and expressive dining experience—one that reflects their shared vision of hospitality, seasonality, and collaboration. For this special evening at Centrolina, they join Chef Amy to craft a menu that bridges traditions, techniques, and personal stories, offering guests a rare opportunity to experience these three chefs cooking side by side.
